Slow Cooker Chalupas

Ingredients - Chicken:
1 large chicken breast half
1/2 large jar of green salsa
1 small can green chiles
1/2 chopped onion
1 package taco seasoning
Ingredients - Toppings:
4 corn tortillas
1 can refried or black beans
shredded lettuce
pico de gallo
avocado or guacamole
Reduced fat four-cheese shredded mexican cheese
sour cream
salsa
(these are just suggestions - you can top it with your Tex-Mex favorite flavors)
Directions: Chicken
  1. Spray slow cooker with cooking spray
  2. In a medium-size mixing bowl, combine green salsa, green chiles, chopped onion, and taco seasoning
  3. Place chicken in slow cooker and cover with green salsa mixture
  4. Cover and cook on low for 4-6 hours. 
  5. Shred chicken with a fork and set on warm. 
Directions: Chalupa
  1. Preheat oven to 400
  2. Lightly spread butter on tortillas
  3. Place tortillas on cookie sheet
  4. Bake on 400 for 12 minutes. 
  5. While tortillas are baking, place beans in small sauce pan and heat over medium low.
  6. Place cooked on serving dish and spoon beans, chicken, and desired toppings on tortillas and serve!
