2 large chicken breast halfs (half each, so you have four)
1/4 cup flour
1 tablespoon of butter
1 table spoon of olive oil
1/2 cup white wine
Juice of 2 fresh lemons
2 tablespoons capers
2 tablespoons minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
- Place each chicken breast between two sheets of heavy-duty plastic wrap, and pound to 1/2-inch thickness.
- Place flour in shallow dish
- Cover chicken with flour
- Heat butter and oil in a large skillet over medium heat
- Add chicken and cook 4-5 minutes on each side
- Remove chicken from pan and keep warm
- Add wine, lemon juice, capers and garlic to pan
- Scrape pan with wooden spoon to loosen browned bits
- Cook for about 2-3 minutes
- Place chicken on plate an poor sauce over chicken
Place chicken and sauce mixture over whole wheat pasta to make even tastier!
