Chicken Piccata With Capers

Ingredients:
2 large chicken breast halfs (half each, so you have four)
1/4 cup flour
1 tablespoon of butter
1 table spoon of olive oil
1/2 cup white wine
Juice of 2 fresh lemons
2 tablespoons capers
2 tablespoons minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
Directions: 
  1. Place each chicken breast between two sheets of heavy-duty plastic wrap, and pound to 1/2-inch thickness.
  2. Place flour in shallow dish
  3. Cover chicken with flour
  4. Heat butter and oil in a large skillet over medium heat
  5. Add chicken and cook 4-5 minutes on each side
  6. Remove chicken from pan and keep warm
  7. Add wine, lemon juice, capers and garlic to pan
  8. Scrape pan with wooden spoon to loosen browned bits
  9. Cook for about 2-3 minutes
  10. Place chicken on plate an poor sauce over chicken
Place chicken and sauce mixture over whole wheat pasta to make even tastier!
