Directions: - Heat a medium saucepan over medium-high heat.
- Coat pan with cooking spray.
- Add onion to pan and saute for 3 minutes.
- Stir in pasta, broth, wine, and thyme and bring to a boil.
- Cover, reduce heat, and simmer for 15 minutes or until liquid is absorbed.
- Stir in chopped chives and lemon juice.
- Remove from heat and cover to keep warm.
- Heat oil in a large skillet (ideally a cast-iron skillet) over medium heat.
- Sprinkle scallops evenly with pepper.
- Add scallops to pan and cook for 4 minutes on each side.
- Serve with pasta mixture
