3 cups of Spring Mix
1/2 cup dried cranberries
1/4 cup chopped walnuts
2 tablespoons goat cheese
2 tablespoons light garlic herb dressing (or any light dressing of your choice)
Directions - Chicken:
- Heat oil in a skillet over medium heat
- Place chicken in skillet and brown on both sides
- Pour balsamic vinegar over chicken
- Season chicken with thyme, oregano, basil and rosemary
- Cook chicken in skillet, flipping chicken occasionally, for 10-12 minutes until there is no pink in the center
- Thinly slice chicken and place over salad
Directions - Salad:
- Place spring mixture, cranberries, walnuts and goat cheese in a large salad bowl
- Cover with dressing and toss
- Serve salad and place sliced chicken on top
