Cranberry and Goat Cheese Salad With Chicken

Ingredients - Chicken:
1 boneless skinless chicken breast half (pounded to 1/4 inch thick)
2 tablespoons extra virgin olive oil
2 tablespoons of balsamic vinegar
Dash of thyme
Dash of oregano
Dash of 
Pinch of dried rosemary

Ingredients - Salad:
3 cups of Spring Mix
1/2 cup dried cranberries
1/4 cup chopped walnuts
2 tablespoons goat cheese
2 tablespoons light garlic herb dressing (or any light dressing of your choice)
Directions - Chicken:
  1. Heat oil in a skillet over medium heat
  2. Place chicken in skillet and brown on both sides
  3. Pour balsamic vinegar over chicken
  4. Season chicken with thyme, oregano, basil and rosemary
  5. Cook chicken in skillet, flipping chicken occasionally, for 10-12 minutes until there is no pink in the center
  6. Thinly slice chicken and place over salad
Directions - Salad:
  1. Place spring mixture, cranberries, walnuts and goat cheese in a large salad bowl
  2. Cover with dressing and toss
  3. Serve salad and place sliced chicken on top
