Creamed Spinach

Ingredients:
2 tsp butter
1/2 cup green onions, finely chopped
1 garlic clove, minced
1 tbsp flour
1 1/2 cups fat free milk
2 tbsp parmesan cheese
1/4 tsp nutmeg
1/4 tsp pepper
salt to taste
4.4 oz Boursin Light
16 oz bag frozen chopped spinach, thawed and drained of all moisture

Directions: 
  1. In a large saute pan, melt butter
  2. Add green onions and garlic and cook on medium for about 5 minutes
  3. Reduce heat to low and slowly add milk, whisking well.
  4. Add flour and mix well.
  5. Add parmesan cheese, nutmeg, salt and pepper
  6. Add Boursin Light and mix until smooth.
  7. Add spinach and combine well with sauce. 
  8. Cook until heated through. Add salt and pepper to taste. Serve immediately
